TWICE BAKED MASHED CAULIFLOWER



Hi everyone!! Here is my recipe for my super simple Twice Baked Mashed Cauliflower! This is a side dish that goes with everything pretty much and you can add more or less of the sour cream and cheese! I try to minimize how much I use on a normal day to day basis but it if it’s a holiday/cheat day then I add MORE lol! It’s a huge hit at parties and family get togethers! Ingredients:

1 large head cauliflower, ripped apart
1/2 cup light sour cream
2/3 cup shredded cheese
Extra Virgin Olive Oil
Sea Salt, Cracked Black Peper and Garlic Powder To Taste

Directions:

Pre heat oven to 400 degrees. Rinse large cauliflower head and rip into pieces and place in large sauce pan. Pour in 3/4 cup water and cover with lid and steam on low heat for 10–12 mins. Make sure to always check that the cauliflower is not burning to the bottom of the pan and if it beginning to just add more water. Mash cauliflower with a potato masher and add in sour cream, cheese and seasonings to taste. Oil an 8×8 pyrex dish with extra virgin olive oil and add mashed cauliflower mixture. Place in oven and bake for 45 minutes. Top with a little bit of cheese, chives or etc.
