Keto Cream of Mushroom Soup

A delicious healthy dish and a perfect pairing to any main dish to complement your lunch or dinner. With just a few ingredients you can enjoy a warm cup of soup on cold winter nights or whenever you feel like it 🙂

1 tbsp butter
1 tbsp olive oil
1 yellow onion chopped
1 tbsp minced garlic
2 cups sliced mushrooms
2 cups chicken stock
2 cups 35% whip cream

– Melt butter with olive oil on medium high heat
– Stir fry onion, garlic and mushroom until golden
– Stir in chicken stock, whip cream, salt and pepper
– Bring to boil until mushrooms are done
– Let it cool a bit then blend half the mixture in blender and pour it back into the soup to smoothen its texture
